Cooking up Fresh Purple Hull Peas

For the past two weeks we have been steadily harvesting our Top Pick Pinkeye Purple Hull Peas. From about 10-12 plants, we harvested about a quart of beautiful purple hulls. We planted later than we would of liked, so we missed out on a considerable amount of our harvest, but that okay!

They turned out so good, we figured we might as well share the recipe.

Equipment Needed:

InstaPot

Slotted Spoon

Ingredients:

  1. 4-6 cups of Fresh Purple Hull Peas

  2. 1 - Ham Hock

  3. 2-3 Slices of Smoked Bacon

  4. 4 Cups of Chicken Broth

  5. 2-3 Cloves of Garlic

  6. Half Tbsp Salt

  7. 1 tsp black pepper

Instructions:

  1. Place fresh purple hull peas, ham hock, bacon, chicken broth, salt, and pepper into InstaPot.

  2. Place lid on pot, making sure the vent is sealed.

  3. Set the InstaPot to Pressure cook on High for 20 minutes.

  4. Once finished, let the pressure release naturally (letting the pressure inside the pot come down slowly over time).

  5. Taste the peas and add additional salt if necessary.

  6. Enjoy!
